The Importance of Apple Pie

A pie has got to be a complete meal in itself. And the pastry is very comforting in its rich and buttery. If anything, I slightly over-season it because I think it's got to be really tasty. The Bramley apple produces such a lovely texture when it's cooked. It's always a good sort of tartness in the background. So it's absolutely perfect. In America, it's usually Granny Smiths that I use to ask what I think of anyway in American cooking.
