If the wine isn't up to their standards, they just will not make a wine that year. They've gone years without making wine and just lose millions of dollars. So nine times since 1910, most recently in 2012, and they won't hesitate. If you don't wait long enough, it's not ready. It has to be super precise in the way that it's made. Otherwise, they won't make it. That's how perfect they want it.
