The Benefits of Dextranloading Beers

We were always trying to make these beers feel fuller and a chewier mouth feel when you're brewing 3.2% beer. So we would heavily dextranload all the mashes and we were talking 158 plus 159 rest. And that's that low low temperature step. But yeah, but you're not even stepmashing this. It is just a low temperature single infusion mash. Thin and cool. Yeah. That thinner mash does actually favor favor attenuation? Oh, yeah, I think so for sure.
