Evidence suggests that red and process meat increases the risk of disease. One hypothesis is that animal hem, a component in meat, is linked to disease. Pat brown's team devised a method to produce plant heam using genetically modified yeast for their plant base, burghers. He explains how they had developed burghers with plant heam in them.
