There are over 700 species of bacteria in a raw milk. Raw cheese is available in most states, or at least it's legal in America. In the U.S., if you don't own a pasteurizer license, which is a permit you have to get and be trained to actually own, that pasteurization process is certified. Even if the milk was brought up above the temperature of pasteurization, it's still raw because it ain't pasteurized.
