Air bubbles are able to interact with proteins and then interact with fat using intermolecular forces. So basically you have an air bubble surrounded by fat, but also there's some protein that helps the fat be where it is. The reliance on fat for the structure is why it you can't let whipped cream get too hot because the fat will melt.
