The book focus a lot on how you bring soil back and like each level of the pyramid that you discussed, Neil. I think this is what Europe does really well is they're like, they have local supply chains. We'll just like pick it now and then you'll eat it within the next few days. If you do want to get stuff out of season, get it frozen. Get it fresh because they freeze it at the peak of season. And then keep it frozen all year. Whereas when you're getting fresh stuff out ofSeason, they're like spraying it with chemicals and stuff to like mess with the harvest.
