In the early 2000s, as Americans want more convenient food, we want our fruit to be cut up. The places where this kind of processing is taking place are oftentimes these like extremely large processing facilities. Sometimes you have animals and agricultural products being processed on the same lots. And then you also just have a scale that would have been totally unimaginable 50 years ago.
