The Power of CNF Fibers in Ice Cream
Cellulose nanofibrils are tiny microfibers that have no smell or taste. Researchers sprinkled them on ice cream to make it last longer in the freezer and store. They also discovered they helped low-fat ice cream have a creamier texture.
