What I've Learned About Sunday Service
I never went back into the upper kitchen again, suffice to say. One thing I never considered is you might have an hour off between say lunch and dinner service, but you have no place to go. The best thing I found was to find the five star hotels and then stroll through the lobby with purpose. It's a wonderful profession for people watching. You're sort of anonymous on different levels, and then you're in a way to suit and you go and remark. And actually it's quite nice. It allows you to see the world a bit differently. This thing about being a waiter or runner, you have this black suit. You talk about you can recognize a waiter on the street
