Rat Clet Is a Classy French Cheese.

There was a company out of Canada that made something called chateau cheese. I don't really remember because it's been so many years since I've had it. If you want to make what your mom made, I would say use American cheese. Rat clet melts well. It's got a nice flavor. Meltedol it is key.
