Nix stimalization is the process of treating corn with a highly alkaline solution that you make from adding wood ash to water. It's called nixtemalization, and it comes from the indigenous newat portmanteau, meaning lime ashes and tamal for corn dough. And all that has taken generations of indigenous knowledge to put in place. i really don't have time to trash fry breadho but i ameanything fry bread like has its place in our culture because we can recognize it as something that helped us survive.
