I'm not a chef, but I do develop some of my own recipes for the book. It's how to completely wreck maple syrup. We make a tart here called treacle tart - it's made with golden syrup with lemon in it. avocado and honey is not something I've put together before. To me most avocado is eaten as guacamole. Or in a sandwich or something like that.
