Chefs love brown butter. It gives it the sort of like it gives butter sort of this hazelnut flavor to it. And it's really delicious. I got into a big debate on a local radio show in Minneapolis about brown butter and rice crispy bars. The trick is then taking it off fast enough and and pointed through a shinwa or a cheesecloth or a coffee filter.
