i gather somewhere people like hazy beer and i gather it sells really well but brewers really struggle to keep that haze in the commercial setting. Any home brewer that's made a keg of heffa vitesen is disappointed when it's pouring perfectly clear in a couple weeks. It's incredible how difficult it is to get hazed when you want it  and how difficult it can be to get clear beer when you need it. The sky is kind of the limit in terms of genetically engineered genetically modified yeast, says Jordan.
