The Glycemic Index of a Potato

The glycemic index was developed in the 1980s as a way to explain the impact of carbohydrates on blood sugar. It compares how much blood sugar is elevated for two hours after eating a specific item like a potato or chips, compared to pure glucose. High GI foods, high glycemic index foods, typically on average are the processed ones we overeat.
