You are paying them. You have the right to ask as many questions as you need to to feel comfortable with the project. Cleaning is the lifeblood of any short term rental business. Don't ever second guess yourself here or feel embarrassed or non confrontational about knowing what services you're going to be getting. If it annoys them, that's a red flag that they're not the right contractor to work with.
