What's the Next Big Thing?
I think that in the food space, I continue to see, you know, new and interesting. And sort of novel approaches to fermentation of novel ingredients and plant based foods over here. And then you've got cellular agriculture over here that takes a very long time. It's very expensive and he's regulatory approval. Now I'm starting to see entrepreneurs combine those two together using mycelium scaffolding for maybe 90% of the end product - plus some cell growth over the mycelium. So these next few years will be really interesting to see where people go next.
