The orange ruffy is a species of fish that lives down in the deep ocean. It's very deeply pigmented and when they die, they kind of fade to this orange color. The fisheries really opened up in the 80s when there was the technologies to locate these huge mountains using sonar. We're talking about single shots bringing up 50 tons potentially of fish in one go.
