I was thinking, what things to genuinely get aside? And I mean, you do have really amazing vegetable dishes in restaurants sometimes. But nothing's sticking out in my head. Then I hit on one thing: bubblers, confi, potato lacas. They're not traditional lacas but almost a bit like sliced potatoes or sliced really, really thin layers.
