With a violin bow, it static friction that's doing the plucking. So once the string is released, it's experiencing kinetic friction which is much, much lower. And so you've got this repeated motion. The physical properties of the string define the resonating frequency of that string. In the case of the a string of a violin, that's 400 forty times per second. You're busily using the bow to repeatedly pluck the string using friction so that it plays the note that it's suppose to be playing.
