Malignant Hyperthermia
The gene for red hair is right next to one of the, I think, cytochromes or one of the metabolizing enzymes for anesthesia. And we're not really sure about the mechanism, but redheads do need more anesthesia. Malignant hyperthermia is extremely rare as well, but it's a severe and can be fatal reaction to anesthesia.
