i suspect that one of, if not the main reason that steak is such a incendiary food topic is because of how much it costs. Ye, like, if you go to ruth's chris, and you're dropping 80 dollars on a ribbi, and then you order it well done, why? It just blows my mind. Why do we think that that ruins a steak when it doesn't ruin a brisket? Brisket's always served well done, ye? You smoke a brisket, you smoke it forever. And so that argument just out, ye, it's absolutely gone. This is getting into the territory of some of my hard core food snobbery things.
