Mashama bailey is the first black woman shef to hold the title, and one of two black women to have won a james beard award ever. She's devoted herself to unearthing the history of african american cooking through research and creative guess work. Mashama says that American food has been defined by colonial settlers and wealthy Americaans versus native Americans who cooked much of food. We also talk to stephen saterfield about reclaiming the history of Afro-American food.
