Coriander Sensitivity to Aldehydes
The aroma and the flavor in coriander is coming from a specific kind of aldehyde, which is also existing in a lot of soaps and detergents as well. There are people specifically who have a very sensitive gene to the flavor of coriander or cilantro. And it's not because of linolol... oh wait, actually I was doing a little bit of research on this beforehand. It's because they have a specific sensitivity to aldehydes. So when we take our supercritical CO2 fluid and we force it through these coriander seeds, then we can extract the S linolol.
