The Kofta of Cyprus

My dad fled Cyprus as a refugee, so I'm the daughter of a refugee. Great potatoes, great onions with very minimal minced meat. Parsley and black pepper. I'm going to have it while it's hot. Oh my God. Excellent kofta. Really great. And yeah, I manage him most of the time. He's the eye colour as well. We are very strict with how things are done. People don't come here and say, oh, it tastes different to the usual. It's because the potato really adds to the texture, and then you've got that. And it also makes it really golden on the outside with that crunch.
