If it gains a proton, it becomes carbonic acid. Which then breaks down into CO2 and water. And that's why it will react with an acid to make the volcano. It basically won't stay carbonic acid as long as possible. So they kind of are in increasing stair steps. The one in the middle, that's baking soda.
