Some people rather than focusing on total carbs, they will look at net carbs instead. They'll basically remove fiber from the equation and only count their non-fiber carbohydrates. Getting plenty of vegetables in the diet is considered a tremendously healthy thing to do. You really don't want to be on a diet where you are aggressively restricting high fiber vegetables.
