In person is likely the best option here, simply because there's so much we can gain from seeing the other person's mannerisms. If you're an expert negotiator, like if this is something that's part of your job or whatever it is, take advantage of the lesser experienced person. Get yourself into a situation where you can sit down and think about what you might regret later in life.
