I try to figure out what were people eating in this region 100 years ago, 200 years ago. Does it still exist? A lot of things don't exist anymore. And I think things like the smoked catfish dip is something that would resonate because it's almost like it's a step away from like a tuna fish salad. It's inexpensive. You can feed a lot of people with it.
