Is There a Difference Between Kombucha and Apple Cider Vinegar?

I'm not 100% sure if this is what happens. But when I think about what's happening at a bacteria level, when the drink, right, that the bacteria in the drink is feeding off of the sugar. Now would it get to a point when they have there is no longer sugar left and the bacteria would die? Is there a potential difference, I guess, in the effectiveness of kombucha that is fresh versus something that's been in a bottle,. Like a long shelf life kombucha.
