The Functional Groups of Vanilloids
Vanilla has a very basic functional group attached to it. That smell that we recognize as vanilla is the chemical name is vanillin with an N at the end instead of an A. So vanilla is in that group. It can be any group of carbons, hydrogens, oxygens, nitrogens. And depending on the function of the molecule, that functional group changes out.
