The History of Coffee in the Ottoman Empire

If we were Arabian, we would probably recognize as coffee but it bears the little resemblance to what you and I drink. A lot of that transformation or the first bit of that transformation really occurs as coffee moves from Arabia and as kind of moves into the Ottoman domain. By the time we get to Istanbul, we've got a very different drink, which is being very heavily roasted and it's based solely on the coffee bean.
