i don't think that the your first argument is particularly persuasive when it comes to your second argument about mathew's depiction of peter. All of the gospels depict the disciples as slow on the uptake and as making mistakes. And i think it is misleading to single peter out in this regard, because they all are clueless at times,. But jesus also sees something in them, and they do things right. So sure, peter is mixed, particularly in his performance before the uh, before pentecost but afterwards, he is a lion.
