The Importance of Critical Thinking
Nappe is the term for when a custard that is thickened by like egg or cornstarch or flour reach it kind of seizes and thickens in a certain way. That's something you look for if you're making an ice cream on glaze or cooking a jam to a certain temp so that kind of goes back to what I was saying about like critical thinking and engaging your senses It's like let's just not even use the word nappe but if you know what to look for when something is thickened then you'll know it's done because your senses are kind of paying attention.
