What determines that is your energy balance, whether or not you're consuming less calories than you're expending. So what happens to that fat? Well, it undergoes a process called lipolysis where the stored triglycerides are liberated into free fatty acids. And those free fatty acids can then be oxidized through a process called beta oxidation. But since carbohydrate doesn't get stored as fat, really, like less than 2% of the carbons that wind up in adipose originated as carbohydrate.
