I remember reading kitchen confidential and simultaneously wanting to be a chef. It's like Schrodinger chef I don't know but you know when he talked about the business aspect of running a kitchen. You still have to be there trying to figure out where’s the meat coming from has the fish guy arrived is the vegetable guy here. That's okay they've got that little chip in your brain there figure out it is a really difficult thing. Yeah like I said it becomes a lot less about the food and more about the kitchen as a whole. And worrying about managing your team managing your staff making sure it's all working towards one common goal.
