If you're going to do a do a one ecology planet, try and do it like Dune did. There is a swath of planet that is jungle, and the rest is ocean. And maybe between the jungles, there's different jungle ecologies. If you can come up with a good reason for it to be a jungle planet, that might be the story seed that your adventure needs. Yeah. Though, again, to give Lucas credit, he doesn't have time in the 15 minutes they're on Hoth to go about doing that.
