The Importance of Salt

Until refrigeration, the main way that you preserved things was by pickling or salting. So we transitioned to agriculture, we didn't have the same steady daily source of food from hunting and gathering. We figured out that we could just put our extra harvest into jars,. And then what might spoil in a few days suddenly lasts for months. That's incredible. But you need salt to do it.
