Would You Use a Governance Token to Create a DeFi Protocol?

If you could create a DeFi protocol, you would not use the governance token. I think I would want to have give up the DAO concept and have a centralized team that develops the protocol. Then I would release the code, have the code be open sourced and anybody can use it. But again, there's pluses and minuses with everything like I said.
