M s g may raise uric acid and kind of by pass the sugar pathway. We're still trying to learn more about it, but it looks like it could be a contributor. I can't really find evidence that umami is harmful. What i usually say is the big four are bread, potatoes, chips and rice. Those four are the foods that you should reduce a little bit.
