In the 19 twenties, you even begin seeing chop sue served outside of actual chinese restaurants. Harlem already had several chop sue houses by the time it became a mecca for black cultural life. In what is perhaps the first instance of a fusion atmosphere here in new york, a german proprietor opened a chinese restaurant with german american trappings and music. But while chinese food would not go the beethoven route, at least not yet, thanks to the diverse, tural landscape of new york city, it would break out and evolve in a variety of ways.
