How to Cook a Rosoto

A rosoto, people say is a challenging dish, and a lot of people find it intimidating. You start by adding the stock a little bit at a time to the pot that you're cooking your rice in. And then when there's not much obvious a water or stock left in the pan, once you can drag your spatula across the bottom and it leaves a trail across the pan or the pot, you just add in more stock. Then keep stirring, and you repeat the process until the rice is cooked to the dunness you want it to be.
