Kelsey: We tend to keep the temperature up so we're usually dry hopping at 70 degrees. Evan: The timing for us depends on if it's like certain varieties that have you know really high polyphenol content like Australian varieties. Kelsey: You get much brighter fruit character and not all that grassiness that tends to just creep out the longer and longer that those hops are in contact.
