How Do You Prove That You're Not Logging?

In Bitcoin with coin joint implementations, coordinators are saying, hey, we're not logging. So how do you give an end user confidence that logging isn't happening? You can never have perfect confidence because you can never really know. The privacy policy of the VPN provider is a very convoluted legalese which nobody reads. And if you care about privacy and you want service that actually respects that, then you just immediately just go away.
