The Effects of Vitamin E on Oxidative Damage Risk
Vitamin E is called a chain-breaking antioxidant because it's capable of breaking lipid peroxidation chain reactions. But you can never stop an oxidant that reaches the cell membrane from oxidizing the first Pufa with vitamin E. You can only stop a chain reaction, so therefore more Pufa or more oxidants always means more Lipid Peroxidation.
