Most common base that you'll probably come across is sodium bicarbonate. I'm pretty sure this is because there's lots of tiny little imperfections on the surface of mentos, which provide nucleation sites. Basically, it provides a lot of surface area for the carbon dioxide to come out of solution in the coke. And what that means is that it's coming out of solution. You've got lots of bubbles.
