Is There a Way to Control for the Poor Memory of Nutritional Data?

Is there something you can do to discount or a textualized people's answer? Because you know that they tend to misremember ex % of time. I've seen different approaches. Recalling them off the top of my head, i can't really recall. What are they doing to really insure that the nutritional data is valid? Is there stuff in the methods of the paper that says, ok, this particular instrument that they're using to measure nutrition has been validated somewhere else? And then, how well was that validation done, and how valid actually as it is?"
