Taking Wheat Back in Time
In the 1960s and 1970s, a huge genetic bottleneck was added to the global food system. At NIAB, they're attempting to reverse that process and restore diversity. The painstaking task of taking wheat back in time is done inside a cluster of large glass houses. It will take more than a decade to make it into farmers' fields. But eventually, Phil believes their new wheat will make it onto our plate.
