Coarsely ground fat, about 30 % is my personal go to to avoid the the frozen, pre package stuff. Get it freshly ground. The corner burger, use dry aged beef. What flavor does that impart to the burgher that you otherwise wouldn't get? There's a slow break on of proteins that makes the beef more tender. It really this kind of gos goes back to that, that very traditional way of preserving me.
